Quinoa is one of the sexy superfood these days. So versatile and full of flavour. Everybody wants to add it to their diet, thanks to all the health benefits it comes with. It has become a favourite of weight watchers as well, especially coz its a gluten free source of protein, iron and fiber and is a quick way of fixing a healthy meal.
Here’s a quick Quinoa salad recipe with green beans and beetroot that has become a staple at home. It’s full of beautiful mix of flavours, heartiness and healthy stuff that it’s a whole satisfying meal in itself. Whenever in doubt or bored of routine cooking and meals, try this one!! It never fails to wow me.
1 Cup uncooked white quinoa
2 Cups water
1 finely chopped onion
1 cooked and sliced beetroot
200 gms steamed green beans
Finely sliced mint leaves
Juice of 1 lemon
1 tablespoon olive oil
Salt and Pepper
Cook the quinoa- Put the measured quinoa in a sauce pan and add in water. Bring it to a boil, then turn the heat down to low and cover and cook for about 15 minutes. Remove the pan from heat and let it stand for 5 more minutes. Fluff and cool.
For the dressing- Mix olive oil, lemon juice and mint leaves together with some salt and pepper.
Add onion, green beans and beetroot to the quinoa and pour over the dressing right before you serve the salad either cold or at room temperature (i prefer the room temperature version).
